Saperavi
Saperavi is an ancient Georgian sort of vine. On morphological signs and biological properties it belongs to the eco-geographical group of vines of Black sea basin. Young leaves are rather yellow-green with a weak rose tint and thick felt covering. One-year ripening sprout is hazel with a grayish tint and umber nodes.
Flower is telianthus. The bunch is middle size (length is 13-17 cm, width is 12-15 cm), wide conical form, often branchy, friable, the bunch’s stem length is middle - 4,5 cm, herbaceous. Middle mass of bunch is 93-99 gram. The berry is middle sized (length 13-18 mm, width is 12-17 mm), oval, navy blue, with a thick waxen covering, pulp is juicy, a peel is thin, but strong. Juice is poorly painted, taste is pleasant and fresh. Middle mass of 100 berries is 120-150 gram. There are 2-3 seeds in a berry.
Leading characters of Saperavi vine are: chlorine, poorly divided leaves with the raised edges and thick spider covering; conical form, friable bunch; navy blue oval berries with poorly colored juice. The sprouts are branchy, with the complete leaves of egg-shaped form, with chamfer camber. The autumn coloring is yellow with wine-red spots.
The bushes are middle sized. One-year sprout ripen well (85 %). The productivity is high and steady 90-110 centner/hectare. This sort of vine belongs to the group of relatively cold-resistant, though winter resistance of it is lower, than Rkatsiteli. Saperavi vine actively accumulates sugar and slowly reduces acidity. The sort is used for preparation of fine table wines, and also sweet wines. Sweet wines are dense colored, with a strong high quality aroma, complete, harmonious and velvety.
