JSC "Agroindustrial firm "Tavria" is the most major enterprise of Ukraine. The principal directions of activity are - winy and brandy production.In accordance with a technological process on a vineyard there are special plants and workshops and areas with six basic technological stages:
• processing of grape with the receipt of a wine material,
• processing of wine material,
• distillation of brandies materials with the receipt of brandy alcohol,
• vintage of brandy alcohol,
• production of brandy blends,
• wines and brandies bottling.
The following departments and areas are organized in the plant of wine materials:
• the area of grape processing - weighing of grape and determination of its high-quality indexes, processing of grape on must and fiber treatment;
• the fermenting department - fiber treatment, yeasts mixture preparation of clean crop, fermentation of must, fortification, settling of wine material and its storage;
• wine-cellar - is the storage of wine materials and its treatment.
On brandy distillation department we get brandy alcohols of two types with the use of:
• the machine by Sharanta type (double distillation);
• the machine of single distillation (passing preparation of alcohol-raw).
The brandy production is concentrated in the vintage workshop of brandy alcohols.
Here, the young brandy alcohols, combined in large groups are matured in oak barrels or in the enameled reservoirs with an oak stave.
Got matured brandy alcohols are mixed up with single materials (sugar syrup and softened water).
The brandy processing and brandy relaxation are the main functions of next department.
